We took the challenge!
In my home, we eat chicken probably 3-4 nights a week, most weeks. That’s a lot of chicken. The problem is that we’ve gotten into that rut of making the same things over and over and over again so we were super excited to take the Hellmann’s® Chicken Change-up Challenge! On top of the rut issue, dinner usually takes upwards of an hour for me to prepare. And what’s worse than taking too long to make dinner? Spending all that time to make dinner then hearing, “We’re having this, again??” – So, when I saw that Hellmann’s® had a recipe for BBQ Cheddar Crusted Chicken that only took 30 minutes total to prepare AND cook I had to give it a try in my own home!
Using this recipe, we were able to transforms our regular chicken into a much juicier, crispier, and more delicious meal that our family loved-and in a half hour, start to finish. We recommend this recipe to save some time-especially on those activity nights when you don’t want to just grab something. Everyone liked dinner and it was so easy and fast to make that we have decided to keep it in rotation around here. Here’s the recipe that we used:
Hellmann’s® BBQ-CHEDDAR-CRUSTED CHICKEN
Makes 4 servings
Prep Time: 10 minutes
Cook Time: 20 minutes
1/2 cup Hellmann’s® or Best Foods® Real Mayonnaise
1/4 cup shredded cheddar cheese (about 1 oz.)
2 Tbsp. barbecue sauce
4 boneless, skinless chicken breast halves (about 1-1/4 lbs.)
4 tsp. Italian seasoned dry bread crumbs
1. Preheat oven to 425°.
2. Combine Hellmann’s® or Best Foods® Real Mayonnaise, cheese and barbecue sauce in medium bowl. Arrange chicken on baking sheet. Evenly top with mayonnaise mixture, then sprinkle with bread crumbs.
3. Bake 20 minutes or until chicken is thoroughly cooked.
Note: We used Hellmann’s® Light Mayonnaise for this recipe and it worked like a charm!
In a house full of, “I don’t eat that”‘s and “but I’d like something else”‘s, I thought we’d have at least one negative comment, but surprisingly we didn’t. They all really liked the chicken and it was moist and tender, just as promised. Because usually the only meal I can get on the table in 30 minutes is a one from the freezer, it was nice to be serving my family a dinner that they loved in a half hour. Time Saving Tip:
We made our chicken with yellow rice and a salad and still managed to have dinner on the table with in 30 minutes-here’s how: Start with boiling your water, then prepare your chicken according to the recipe and put it in the oven to cook. As your chicken bakes, add your rice to your boiling water according to package instructions and prepare your salad. By the time your chicken is ready everything else is, too. So easy!
