Creamy Santa Fe Shrimp & Pasta

High Fiber Rotini

This is a super quick and yummy dish I whipped up this week and wanted to share with you all.

1 lb cleaned and deveined shrimp
1 box rotini pasta High Fiber Rotini
4oz Parmesan Cheese (1/2 Cup)
4 tbsp (heaping) Ranch dressing (if you only have diet, use sour cream instead…diet sour cream beats diet salad dressing!)
2 tsp Garlic powder
2 tsp Onion powder
salt to taste
8oz Cream Cheese – Philadelphia cooking creme, Santa Fe (You can use any flavor that you want…it just won’t be Santa Fe with another flavor :) ) Philadelphia Cooking Creme

Super easy!
1. Remove any tails from shrimp.
2. Bring salted water to boil and add pasta and shrimp. Cook according to pasta package directions (7-9 minutes usually).
3. Drain pasta and shrimp, then return to pan. Add Philadelphia cooking creme, ranch (or sour cream), and Parmesan cheese.
4. Stir, then add garlic powder, onion powder and salt to taste. (Don’t over salt…you can always add more, but you can’t take it out!)

Time: 15 minutes
Servings: 6

Serve as a side dish or main course.

Side notes:

Any time I say ranch I mean the hidden valley packet mixed with mayo and sour cream or ranch from scratch. Bottled ranch always tastes a bit off to my and my family so we avoid it!

This is a super easy dish-you can swap out chicken for the shrimp (you may want to cook it separately to make sure it is done before adding to recipe-you could even cook the chick by itself it in the crock pot during the day then toss it in, in place of the shrimp at number 3)

Tip: I used the pasta pictured because it has 2.5 times the fiber and it tastes just like regular pasta! The family will never notice the difference, and you can feel better about what they are eating. In fact, I suggest you try their whole line.
